Baby Heather came over today and among other things we made Grandpa Eagar's Banana Bread.
First she helped me sour the milk. When the measuring cup with milk got turned over by a little hand, the little voice said "Oops, so sorry". Then she helped me crack the eggs. When one of the eggs ended up mostly on the floor and baby's head (baby is just a dog), the little voice said "Oops, so sorry".
Then it was time to cut the bananas. She was having a great time until she got to a really ripe one. You know the kind that the knife can't cut, but the pressure of the knife makes the peel break open in an unexpected place and ooze banana. Well this was just too much. She put the knife down. She climbed off of the chair and said (in a not so little voice) “You need to clean up that mush banana” (now in authoritative and dramatic tones) “It’s CREEPING ME OUT!”
That little Girl makes me laugh!
Grandpa Eagar’s Banana Bread
Ingredients
1 c butter
2 c sugar
4 eggs
1 t salt
1 t soda
4 c flour
1 c soured milk (subtract 1 tablespoon of milk then add 1 tablespoon of lemon juice or vinegar)
6 well ripened bananas
2 t vanilla
1 1/2 c chopped walnuts
Instructions
Mash the bananas thoroughly. Sour the milk. Prepare 3 loaf pans by greasing with butter and dusting generously with granulated sugar. Preheat oven.
Cream the butter and sugar. Add eggs. Stir in salt and soda. Scrape the sides of the bowl and mix well. Add flour alternately with milk. Add vanilla and bananas. Stir in walnuts.
Pour into prepared pans. (Mom always sprinkled approximately ¼ cup sugar on top of each loaf)
Bake. Let cool for about 15 minutes then transfer to wire racks.
Preheat Oven to 350° Bake 45 Minutes (or until a skewer stuck through the middle comes out clean).
